When your guests arrive
they will see a beautiful buffet and baskets filled with fresh
and colorful vegetables, since fresh vegetables have always
florished in great abundance and variety in the mediterranean
countries.
At one station there will be
baskets of fresh pita bread and crisp pita chips drizzled
with garlic, herbs and olive oil and:
Hummus with Tahini - Pureed
garbanzos with sesame tahini, fresh lemon garlic and fresh
parsley
Babaganoush - Pureed
roasted eggplant with sesame tahini, garlic & fresh lemon
Turkish Salad - Sauteed
cubes of eggplant, red pepper, onion, tomato, garlic &
parsley
Israeli Salad - Chunks
of tomato, cucumber, peppers, green onions in a lemon &
oil dressing
Falafal Balls- Ground
garbanzo, with cumin and fresh parsley fried to perfection!
Another station will have platters
of:
Spinakopita -Spinach
and feta cheese encased in filo dough and topped with sesame
and baked till golden brown.
Since fish was and still is a major
source of food for people living in countries bordering the
mediterranean we will serve it in this traditional Serphardic
way:
Mahi Mahi baked with fresh
vegetables, tomatoes and lemon juice
Mediterranean
Chicken Kabobs - Marinated chicken brest
and fresh vegetables in lemonolive oil and oregeno
Lentils with
Rice - Simmered with onions and cumin
Orzo with Vegetables
and Pine Nuts - Browned with garlic and olive oil
For dessert your
guests will enjoy authentic Turkish Coffee, Brewed Coffee
and Fresh Fruit Platter - Fresh Melons &
Grapes
Cookies and Baklava - Anise,
nut and meringue cookies along with our delicious homemade
baklava
